Preparation
Separate the egg whites from the yolks.
Beat the egg yolks with two tablespoons of sugar. Mix in the mascarpone and lemon zest.
Beat the egg whites until they form firm peaks. Add a tablespoon of sugar and gently blend in with the first mixture.
Mix the coffee, apricot liquor, honey and apricot juice in a bowl.
Chop the apricots into cubes.
One by one, soak the biscuits in the syrup and use a layer of them to cover the base of the tray. Then add alternating layers of cream and apricots. Continue until all the ingredients are used up finishing with a layer of cream.
Keep in a cool place for at least two hours.
Garnish with apricots and dust with cocoa powder before serving.
