Apricot panna cotta

Preparation

  1. Put the lemon juice, Abricotine, apricots, sugar and split vanilla pod in a pan, bring to the boil, cover and simmer for a few minutes.
  2. Remove the vanilla pod and reduce the mixture to a fine purée.
  3. Squeeze the leaves of gelatine and add them to the mixture, and stir until dissolved. Add the cream.
  4. Pour the mixture into glasses. Cover and chill in the refrigerator for 4 hours.
  5. Decoration: just before serving, mix the apricot pieces with the sugar and lemon juice and add to the glasses.

 

The apricot panna cotta can be prepared 2 days in advance. Keep in the fridge in a covered container.
