Apricot panna cotta

Preparation
- Put the lemon juice, Abricotine, apricots, sugar and split vanilla pod in a pan, bring to the boil, cover and simmer for a few minutes.
- Remove the vanilla pod and reduce the mixture to a fine purée.
- Squeeze the leaves of gelatine and add them to the mixture, and stir until dissolved. Add the cream.
- Pour the mixture into glasses. Cover and chill in the refrigerator for 4 hours.
- Decoration: just before serving, mix the apricot pieces with the sugar and lemon juice and add to the glasses.
