In Valais, cheese is an art form. Using milk from cattle fed on alpine herbs and local grasslands, master cheesemakers continue to practise their ancestral craft. Soft, semi-hard or hard cheeses made from cow's, goat's or sheep's milk: each one has its own unique personality. What do they have in common?
