Preparation

  1. Pit and halve the apricots.

  2. Chop the apricots, onion and tomatoes into large pieces. Put the ingredients into a mixing bowl.

  3. Add the oil, vinegar, salt, pepper and sugar. Then reduce the mixture to a fine purée.

  4. Put in a cool place for about 1 hour.

  5. Serve the gazpacho garnished with ice cubes and basil sprigs.
