Ingredients (4 people)
Preparation
Pit and halve the apricots.
Chop the apricots, onion and tomatoes into large pieces. Put the ingredients into a mixing bowl.
Add the oil, vinegar, salt, pepper and sugar. Then reduce the mixture to a fine purée.
Put in a cool place for about 1 hour.
Serve the gazpacho garnished with ice cubes and basil sprigs.
