Preparation
Halve and stone the apricots.
Slice the apricots and dice the sérac cheese, arrange them on a plate and drizzle with lemon juice.
Pour the vinegar into a small bowl, season with salt and pepper, add oil.
Season the apricots and garnish with a little rosemary for extra flavour.
