Preparation
- Halve and stone the apricots.
- Slice the apricots and dice the sérac cheese, arrange them on a plate and drizzle with lemon juice.
- Pour the vinegar into a small bowl, season with salt and pepper, add oil.
- Season the apricots and garnish with a little rosemary for extra flavour.
